Revo Foods, the Austrian food technology start-up, has, today, opened the world’s largest industrial food 3D printing facility in Vienna, Austria. Revo Foods’ opening of the “TASTE FACTORY” marks the world’s largest food 3D printing facility to date. At full capacity, the facility can produce up to 60 tons per month, making it the world’s first large-scale application of food 3D printing technology.

“3D Structuring Technology” precisely combines two different materials, such as fat and protein (found in muscle meat), to create new complex forms. This produces novel textures as well as very juicy and tender structures, which are especially useful for plant-based filets or steak products. The fat integration results in the delicate layers of THE FILET, which easily separate when fried or baked. This functionality improves the aroma, mouthfeel, and overall culinary experience.

One of the most promising applications for the technology is the creation of protein-rich foods from natural raw materials or biomass, such as mycoprotein. Traditionally, industrial production methods involve high temperatures and pressure, which have a negative impact on the nutrient content of the final products.

In contrast, Revo Foods technology operates under milder production conditions (low temperature and low pressure), retaining more micronutrients, representing a significant advancement in industrial food production.

Today’s food production is often rigid, with little room for product iteration. 3D Structuring technology transforms this by automating complex processes, allowing for the rapid production of diverse foods and short iteration cycles on the same machine without requiring significant hardware changes.

This digital flexibility, combined with the ability to incorporate a wide range of ingredients, enables the creation of completely new textures and culinary experiences. Large food producers have already expressed an interest in using 3D Structuring Technology for innovative product development. Revo Foods is therefore working with various partners on joint product developments that will be presented in early 2025. Future applications include “Personalized Nutrition” and “Mass Customisation,” which will enable the development of tailored food solutions to meet individual consumer needs.

Revo Foods has introduced its first TASTE FACTORY product, “THE FILET – Inspired by Salmon,” a brand new filet made from mycoprotein (fermented mycelium). THE FILET has a Nutri-Score of “A” and is high in protein, omega-3 (from microalgae oil), and essential vitamins B6, B9, and B12. It is rich in fiber and free of cholesterol, sugar, and gluten.

The initial launch partner for THE FILET on October 3rd in over 500 locations is REWE Austria, one of Europe’s largest retailers. Customers in Europe can also order THE FILET from Revo Foods’ online shop.

THE FILET’s main ingredient, mycoprotein, is regarded as one of the most nutrient-dense protein sources in the world. It contains a full amino acid profile, is high in fiber, and has a higher bioavailability than beef. Mycelium is commonly referred to as a “superfood” due to its high nutritional value, and it has already gained significant popularity in the fitness industry.

It is also one of the most sustainable protein sources because it uses few resources and grows rapidly – its mass can double in just a few hours. Its naturally meat-like texture allows for minimal processing, contributing to its status as a “low processed food.”
